COOK PUMPKINS AND SAVE

Pumpkins are relatively cheap in North America, yet many
consumers throughout the USA simply use them as Halloween
decorations which are smashed in the street by hooligans or simply
discarded. Yet there are much better uses.
Why not make a meal around a pumpkin, it's simply a
winter squash of a different color and slightly different
flavor?
The noble pumpkin can be baked, steamed, boiled, broiled,
fried and mashed. And don't forget about roasting the
seeds: a rich source of magnesium, manganese, phosphorous
and other nutrients. A great inexpensive snack as well.
One of my favorite, creative ways to use a pumpkin is to
slice off the top; clean out most of the pulp and seeds (save
it of course for other purposes); fill with a hearty vegetable
stew mixture and bake in the oven.
A real cooked pumpkin, filled with steaming stew makes a
great autumn-themed dinner party item and centerpiece.
There are literally thousands of healthy pumpkin recipes
available on the internet, free of charge. It's also so
easy to make one up yourself!
